Easy-to-Make Power Pancakes (Gluten-Free, Vegan)

This recipe is an adaptation of Oh She Glow’s Easy Vegan and Gluten-Free Pancakes—thank you, Oh She Glows for the base recipe!

Power Pancakes:

1 cup dried + shredded coconut meat

1/2 cup brown rice flour (possible substitute: whole wheat flour)

1.5 cups + 3 tablespoons coconut milk

2 mashed bananas

½ cup of organic, fresh blueberries

2 tablespoons Revive Me

2 tablespoons raw honey

2 teaspoons baking powder

2 teaspoons pure vanilla extract

½ teaspoon of Busy Bee

½ teaspoon cinnamon

¼ teaspoon natural sea salt


Makes 9 pancakes

Cook Time: 20 minutes



Place your pan on a medium heat with ¼ tablespoon of cold-pressed coconut oil in the pan. While your pan heats to the right temperature, blend ingredients into the bowl.

Place pancake batter onto the warm pan, and allow them to cook until they no longer stick to the pan (they will be a sun-kissed green color).

Top with a berry glaze, and eat as many as desired—the left-overs will last for up to 5 days in your refrigerator, and can be frozen to be kept longer.

Consider grabbing a bowl of fresh yogurt, and toss torn up pieces of your heated pancakes into the bowl, then drizzle with raw honey.

The fat coupled with the anti-oxidants actually boosts the anti-oxidant power up to three times—talk about a power bowl. Yum, yum, yum.
