Power Pancakes:

1 cup dried + shredded coconut meat

1/2 cup brown rice flour (possible substitute: whole wheat flour)

1.5 cups + 3 tablespoons coconut milk

2 mashed bananas

½ cup of organic, fresh blueberries

2 tablespoons Revive Me

2 tablespoons raw honey

2 teaspoons baking powder

2 teaspoons pure vanilla extract

½ teaspoon of Busy Bee

½ teaspoon cinnamon

¼ teaspoon natural sea salt

Makes 9 pancakes

Cook Time: 20 minutes

Directions:

Place your pan on a medium heat with ¼ tablespoon of cold-pressed coconut oil in the pan. While your pan heats to the right temperature, blend ingredients into the bowl.

Place pancake batter onto the warm pan, and allow them to cook until they no longer stick to the pan (they will be a sun-kissed green color).

Top with a berry glaze, and eat as many as desired—the left-overs will last for up to 5 days in your refrigerator, and can be frozen to be kept longer.

Why is this recipe so good for you?

It’s packed with healthy fats, anti-oxidants, essential greens (like chlorophyll), *adaptogens, essential vitamins and minerals, and it actually tastes good!

The end result of eating these pancakes is that you start your day in good stride, you power your cells to keep your metabolism running smoothly, you’ll feel less tempted to stress eat during the day (you won’t be hungry!). and your mind will be super-sharp.

*adaptogens refuel your adrenal glands in a way that converts your body’s stress into healthy fuel.

When should you use this recipe?

Oh my god, anytime you have to be on your "A" game!

This recipe will fuel your brain's RNA + DNA cells, keep your blood sugar levels stable for hours (which helps you work more efficiently and increases your concentration ability to get more done), and it helps repair your stomach lining which is your “second brain.”

If you are experiencing skin flare ups due to stress, use this as your go-to breakfast. The ingredients will calm your body, restore your vitamin + mineral levels, and will strengthen your "stress defense shield," which means your body has all it needs to combat anything that comes your way for a healthier body (and mind).

If you have children who need to consume non-irritating diets, this will be a fun one for you! It’s a healthier take on your traditional pancake, and the ingredients are safe for all ages.

If you have leftovers, what else can you do with these pancakes?

Girrrrrrllllll, bring these to work with you—people will be lining up at your desk asking for a bite (yes, this really happens).

However, if you want to keep them all for yourself and shake it up a little bit:

Consider grabbing a bowl of fresh yogurt, and toss torn up pieces of your heated pancakes into the bowl, then drizzle with raw honey.

The fat coupled with the anti-oxidants actually boosts the anti-oxidant power up to three times—talk about a power bowl. Yum, yum, yum.
